Hi there! I haven’t done this before but if it was me, I’d remove the cuff (because you’ll probably have to shorten the sleeve anyway for this kind of alteration) and use this video for help: https://www.professorpincushion.com/professorpincushion/shorten-cuffed-sleeve/
Then, I’d use the french cuff you took off as a pattern to cut new fabric and interfacing from. Then construct a new cuff using the instruction similar to this video: https://www.professorpincushion.com/professorpincushion/button-cuff/
